Marxist vs cultural and educational approaches of healthy eating

"The results indicate that healthier food consumption patterns may have an associated time cost. In this study, healthier food consumption patterns, characterized by more frequent consumption of fruits and vegetables, less money spent on food away from home, and fewer visits to fast food restaurants, were all significantly associated with more time spent preparing, cooking, and cleaning up from meals. One interpretation of these findings is that time spent cooking at home is a prerequisite to achieving healthier food consumption patterns. Even the USDA’s Thrifty Food Plan (characterized by a healthy diet plan at the lowest cost) heavily relies on cooking at home, implying that home cooking is important for achieving higher diet quality at lower costs."

Instead of cooked tomatoes: eat a tartare and a raw salad of tomatoesred peppers and garlic!

http://www.tandfonline.com/doi/pdf/10.1080/10408398.2011.623799

Why?
Because if cooking tomatoes increased lycopene biodisponibility it comes at a price: the destruction of vitamin C!

Growth hormones in milk

"Studies have shown that Human and bovine milk normally contain small amounts of growth hormone. After ingestion, growth hormone as any other protein in milk: it is digested into its constituent amino acids and di- and tripeptides. There is no data to suggest that BST present in milk can survive digestion or produce unique peptide fragments that might have biological effects. Even if BST is absorbed intact, the growth hormone receptors in the human do not recognize cow BST and, therefore, BST cannot produce effects in humans. "

It is a fact correlation is usually not causation. Hyperhomocysteinemia is probably the witness of dysmetabolism and not the cause of mental deterioration.

Selenium: eat one Brazil nut per a day and organs, fatty fishes or seafoods

Thomson CD, Chisholm A, McLachlan SK, Campbell JM. Brazil nuts: an effective way to improve selenium status. Am J Clin Nutr. 2008 Feb;87(2):379-84. PMID: 18258628

You need 55 microg/day
The minimum blood level is 1,27 micromol/l

one Brazil nut is around 50 microg

Selenium is an essential trace element. Its importance is underlined by the fact that it is the only trace element to be specified in the genetic code - as selenocysteine. Selenium is a key component of several functional selenoproteins [e.g., glutathione peroxidases (GPx), thioredoxin reductases, iodothyronine deiodinases and selenoprotein P] that protect tissues and membranes from oxidative stress and control the cell redox status. Evidence from in vivo and in vitrostudies suggests that selenium could enhance insulin sensitivity by mediating insulin-like actions.

Potatoes versus pumpkin: GI does not make the difference

http://well.blogs.nytimes.com/2014/11/07/a-low-carb-switch-for-mashed-potatoes/?

Pumpkin GI 75
Sweet potatoes GI 46 boiled 94 baked, but a more official paper shows:
Glycemic indices calculated from these methods for steamed, baked and microwaved sweet potato flesh were 63 ± 3.6, 64 ± 4.3 and 66 ± 5.7, respectively, indicative of a moderate glycemic index food.

Is lipid profile a reliable composite biomarker of CVD death and MACE? (in french)

Atheroma is the result of a cluster of risk factors both genomic and environmental

(Finally, we also studied the influence of the different breakfasts on the percentage of subjects with optimal lipid profile, defined as HDL > 35 mg/dL, LDL < 150 mg/dL, and total cholesterol < 200 mg/dL, according to NCEP-ATP III (National Cholesterol Education Program-Adult Treatment Panel III) and SEA (Sociedad Española de Arteriosclerosis) recommendations [19]. As shown in Figure 2, only the breakfast with margarine was able to produce a statistically significant increase of the percentage of subjects with optimal lipid profile.)

3/ BMI vs Cholesterol

"In conclusion, our results suggest that BMI may be a valuable alternative to cholesterol in CVD risk prediction models. This finding needs to be validated in other populations."
